one sub or two, wired in mono or stereo, it won't matter.
As noted above, at those frequencies, the source material is mastered in mono anyway.
I use a single 18" sub in my car driven by a bridged stereo amplifier, and I guarantee you, you would not be able to tell me if there was one, two, or four subs in the trunk of my car without looking.
One possible problem could be that if you're using a Y-splitter RCA cable to go from one to two lines out, this could be causing some feedback at line level, which is where it will cause the biggest trouble.
